Crock Pot Favorite – Turkey Breast-2 Ways!

I registered for a Crock Pot when we filled out our wedding registry.  Every “must-have wedding checklist” included one.  Why not me – even though I knew I would never use it.  Those things were for moms and grandmoms.  Fast forward a few years and the thing I thought I would never use gets used at least once a week – even more in the winter months.  A Crock Pot is easy – easy to use and easy to clean!

CrockPot Recipe

I’m going to share one of my first and favorite Crock Pot recipes with you and also tell you how you can stretch it into 2 meals!  Yes – one turkey – two meals!  Bonus – even my kiddos will eat it and ask for seconds!

Turkey Breast Recipe

Ingredients:

1 thawed Turkey Breast (usually takes a day to thaw from frozen)

2 cans of chicken stock

1 tbsp. minced garlic

Olive Oil

Garlic salt and Cavendar’s (Greek seasoning)

Directions:

Place the thawed turkey breast in the Crock Pot.  Rubbed the top with minced garlic and pour the olive oil over the garlic.  Shake the garlic salt and Greek seasoning on top of the turkey to season it even more.  Pour the 2 cans of chicken broth in the Crock Pot.  Cover and cook on LOW for 8 hours or on HIGH for 4-5 hours.

That’s it!  I promise you that is the yummiest and most tender turkey you will ever have.

Next up – Turkey, Rice, and Spinach Soup

This recipe is one my grandmother used to make with leftover chicken.  I substituted leftover turkey and found it to be just as yummy and satisfying. And, it is E-A-S-Y!

Ingredients:

Leftover turkey breast (chopped or shredded)

3 cans of chicken broth (or 4 if you are making it for more people)

1 cup of rice

1 block of frozen spinach

Garlic salt and black pepper

Parmesan cheese

Directions:

In a stockpot, add the chicken broth, rice, and leftover turkey.  Follow the directions on the box of spinach to thaw it out.  Once it is thawed, add the spinach to the soup mixture.  Add garlic salt and black pepper.  Bring to a boil and then cover and simmer for 15-20 minutes.  Serve with shredded parmesan cheese on top.
